You know that feeling? That one where you’ve been invited to someone’s house for lunch or dinner and you’re bringing something but it doesn’t feel like enough? Maybe yours manifests as “don’t we need one more side dish?” or “what am I serving to those vegetarians?”
I’ve got you. Here’s a sweet/savory salad for Rosh Hashanah and the rest of your autumn noshing needs. I just threw it together and I was so excited about it that I had to share.
Apple Quinoa Salad
1 cup quinoa – cooked according to package directions and cooled
1 T Maple syrup or Boiled Cider
2 T apple cider vinegar
2 T olive oil
salt and pepper to taste
2 medium apples, peeled and chopped. I used Zestar, pick your favorite GOOD apple. No Red Delicious.
1/2 cup shelled sunflower seeds. I like roasted & salted but any kind is fine.
1/2 cup raisins
1 cup chopped greens. I used swiss chard. Spinach, kale, or even parsley would work nicely.
Whisk syrup, vinegar and olive oil together. Taste and add salt and pepper to your liking. Add to quinoa and mix thoroughly. Add apples, sunflower seeds, raisins, and greens to the quinoa and toss to combine.
